Our Story

A Family Farm, Generations in the Making

Wayside Cattle Co. has grown from generations of caring for land and cattle. What we raise reflects how we live — and every cut that carries our name reflects that same care.

On our pasture in Coffey County, Kansas, we raise both Fullblood and American Wagyu, and bring it to you direct — from our farm to your table.

Why Wagyu

The Difference Is in the Marbling

That fine white webbing isn't fat around the meat — it's fat within the muscle. As it renders, it brings tenderness and depth of flavor from the inside out. It's what sets Wagyu apart from conventional beef.

A Richer Kind of Fat

Wagyu is naturally higher in oleic acid — the same monounsaturated fat found in olive oil — giving it a buttery texture and a lower melting point.

Melt-in-Your-Mouth

That lower melting point creates a steak that's exceptionally tender and flavorful — remarkable from the first bite to the last.

Generations of Genetics

Wagyu were bred over generations for fine, even, consistent marbling — a genetic predisposition you can see and taste in every cut.
